Jason is correct. You can gain a little bit of info for jetting, but the 5 will get you everything that matters. A 5s would provide more accuracy on the GPS side, but you can definitely get by with the 5.

Molecule stain remover, with a bit of scrubbing, and molecule detergent in the wash. Not perfect, but works well.

The rev limiter is not regulated by speed, it is regulated by rpm. Gearing changes speed versus rpm, so the simple answer is gearing. You failed to mention what you're seeing for rpm. The limiter should cut in around 6100 rpm, so you will likely see your peak rpm somewhere between 6050, and 6150 ...

I wasn't actually concerned about new tires being put on on a Sunday, but actually being able to switch between used ones from other race days. There will be people who don't race on the Saturday showing up on the Sunday with new tires anyway.
