I’m curious if more guys prefer the 180mm or 210mm rear tires in Briggs? Particularly in masters. Thanks!

I believe you are referring to the rim and not the tire. Many have tried the 6" tire on a 7" rim and most have settled at 6" tire on 6" rim.
Don't forget that if you try this and are running at max width, you will be over !
